Ingredients
4 lbs carrots
2 leeks
2 bell peppers
64 oz chicken bone broth
1 tbsp turmeric
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground ginger
1 tbsp extra virgin olive oil
2 blocks silken tofu
Salt & pepper, to taste
Instructions
Wash and chop all vegetables into roughly 1-inch pieces.
Thoroughly rinse and dry the sliced leeks.
Heat olive oil in a large pot over medium heat. Sauté the leeks and bell peppers until soft, about 5 minutes.
Add the spices and stir until fragrant and well combined.
Add carrots and bone broth. Increase heat to high and bring to a gentle simmer.
Reduce heat to low, cover, and simmer until carrots are fork-tender.
Remove from heat. Add drained silken tofu and blend until smooth using an immersion blender (or carefully blend in batches).
Season with salt and pepper to taste.
